Goat cheese stuffed baked chicken

INGREDIENTS:

4 boneless, skinless chicken breasts or approximately 12 oz worth of chicken sliced thinly

1/4 cup of goat cheese

1/4 cup of another cheese like Havarti, Muenster, or Gruyere

Italian seasoning

1 egg beaten to blend

 

1/2 cup of breadcrumbs

1 clove of garlic

1 tsp of lemon pepper seasoning

2 tablespoons of unsalted butter or Smart Balance melted

Salt and pepper as desired

PREP TIME: 10 MINUTES
COOKING TIME: 30 MINUTES

DIRECTIONS:

1. Preheat oven to 400 degrees. Pound chicken between sheets of waxed paper or even paper towels to thickness of 1/4 inch using meat mallet or really any cooking utensil that could be used to beat the chicken with. Pat chicken dry. Combine cheese and seasonings in small bowl. Season with salt and pepper. Spread cheese mixture lengthwise over half of each chicken piece. Tuck short ends in. Roll chicken up or fold over for smaller pieces. Dip chicken in egg, allowing excess to drip into bowl. Roll in breadcrumbs, shaking off excess.

2. Stick toothpicks through chicken and place chicken pieces in 8-inch square baking dish. Pour 2 tablespoons melted butter over. Bake until cooked through, about 20-25 minutes. Check to make sure chicken is cooked through then broil for 5 minutes to make breadcrumbs nice and crisp.

3. Serve with a salad or mixed vegetables for a well-rounded meal. Enjoy!
